Black Bean Casserole!
So good I was asked by the children to make it twice in one week.
There are so many brilliant things about this dish, not least that it’s perfect warming,delicious winter food, but the fact that it can be prepared in approximately 30 minutes has to shout ‘make me’ even on evenings when we are tired or overstretched.
I served it with a huge pile of green vegetables including broccoli and peas, next to heaps of creamy mashed sweet potato ( I added a dollop of the vegan cheese pictured below and it was yummy! )
🍅2 cans organic chopped tinned tomatoes
🍅1 packet sausages of your choice ( I used Cauldron veggie sausages which are the most like a meat sausage I have found and super tasty- full of herbs.)
🍅 1 can black beans ( I use Biona organic)
🍅1 large organic red onion
🍅1/2 organic sliced courgette
🍅3 cloves organic chopped garlic
🍅Splash of red wine
🍅Good shake of Tabasco
🍅 2 tablespoons red lentils
🍅1/2 teaspoon paprika
🍅1/2 tablespoon Worcestershire
Sauce ( I used a vegan version)
🍅1 tablespoon tamari
🍅1/2 teaspoon Kallo vegetable bouillon
🍅1/2 teaspoon mixed organic herbs
Pre heat the oven to 200dc
🍠 Cook the sausages by either grilling or frying ( with as little oil as possible- I am using avocado right now and loving it)
🍠 Meanwhile chop the onion and garlic
🍠 in a casserole dish place a dash of oil and start to cook the onion and garlic
🍠 Add the lentils and stir really well not letting them stick to the bottom.(a couple of minutes)
🍠 Add the water and bouillon and stir well
🍠 Add the tomatoes, herbs, and other condiments including the wine 🍷
🍠 Add the courgettes and the black beans.
🍠 Chop the sausages and add to the casserole . Give everything a really good stir
🍠 Stir well and place in the oven for 15 minutes
