Chilli Salmon Ramen
This meal is super quick to prepare and in our house, eaten super quick too! ๐ฌ
Full of crisp fresh red onion, peppers and just as hot as you like it with fresh chilli ๐ถ, it is also rich and fragrant with fresh coriander, lime leaves and lemongrass.
Choose to go plant based with cashews and marinated tofu ( from Cauldron foods) or here I poached 4 Atlantic Salmon fillets in the soup while it cooks.
This should all take you approx 20-25 minutes from start to finish.

You would need;
๐ถ 4 salmon fillets OR Tofu/Cashew nuts
๐ถ 1 red onion finely sliced- not diced
๐ถ 3 cloves of very finely sliced garlic
๐ถ 1-2 diced chilli
๐ถ. 1-2 sliced red/ yellow pepper
๐ถ 3 Cm grated ginger
๐ถ 6 or so good sized brown mushrooms sliced
๐ถ 1 can coconut milk
๐ถ 2 kaffir lime leaves
๐ถ 1 stick lemongrass
๐ถ 1 teaspoon organic Miso paste
๐ถ juice of 2 fresh limes
๐ถ 1 teaspoon Japanese shischimi spices
๐ถ 1 litre hot water ( more if you prefer a thinner consistency )
๐ถ 1 packer fresh coriander
๐ถ Small amount coconut oil
๐ถ Noodles of your choice. I love clear spring organic pictured below.
How!
๐ฅฅ In a large saucepan put the coconut oil, and bring to the heat. Add the garlic, chilli, ginger and stir while cooking for a few minutes. Add the kaffir lime leaves and lemon grass to the pan. Continue to mix for another minute or so.
๐ฅฅ Add the onion, peppers and mushrooms and continue to stir well.
๐ฅฅ Add the teaspoon Japanese shischimi.
๐ฅฅ Make up - litre of stock with the water and miso paste. Squeeze in the lime juice. Add this to the saucepan. Stir well.
๐ฅฅ open the can of coconut milk and empty into the pan stirring as you go.
๐ฅฅ Next either add your salmon fillets or your tofu and nuts. Cook for approx 4 minutes.
๐ฅฅ Taste your soup and check any seasoning that needs to be done and then add noodles of your choice. I like to cook them in the soup as it really thickens it but you may prefer to cook separately in boiling water first before adding.
When the noodles are cooked, you are ready to serve immediately.
Top with generous amounts of chopped coriander and fresh chilli ๐ถ to your own taste.
